Marinated Mushroom Salad


Serves 4


  • 500g button mushrooms (or mixed with portabello)
  • 3 cloves garlic
  • 125ml chopped fresh parsley
  • 60ml olive oil
  • 60ml lemon juice
  • Salt and pepper to season



  • Slice the mushrooms and chop the garlic and mix together with the parsley.
  • Whisk together the olive oil and lemon juice and toss in.
  • Season with salt and pepper and set aside to marinate for at least 2 hours before serving.
