Serves 4
Ingredients:
- 500g button mushrooms (or mixed with portabello)
- 3 cloves garlic
- 125ml chopped fresh parsley
- 60ml olive oil
- 60ml lemon juice
- Salt and pepper to season
Method:
- Slice the mushrooms and chop the garlic and mix together with the parsley.
- Whisk together the olive oil and lemon juice and toss in.
- Season with salt and pepper and set aside to marinate for at least 2 hours before serving.
