Ingredients:

  • 45ml (3tbs) olive oil
  • 15ml (1tbs) lemon juice
  • 1 clove garlic, crushed
  • salt and pepper to taste
  • 2 spring onions, chopped
  • 50g tomato, chopped
  • 150g canned chickpeas, drained
  • Feta

Method:

  • Whisk the olive oil, lemon juice, garlic, and seasoning together in a salad bowl.
  • Add the chopped onion, tomatoes, feta and chickpeas.
  • Mix well

*substitute chickpeas with lentils if desired
