Broccoli Soup

Serves 2


  • 1 tbsp olive oil
  • 2 garlic cloves, crushed
  • 500ml veg stock
  • 400g broccoli, cut into florets
  • 100ml milk (or coconut milk or similar)
  • freshly ground black pepper
  • Heat oil in large pan, add the garlic and gently saute for 1 minute or so, taking care not to let it burn
  • Add the stock and broccoli and bring to boil
  • Reduce heat, cover and simmer for 10 minutes, or until broccoli is tender
  • Add the milk, black pepper (to your taste), then blend until smooth
