Ingredients
- 125ml warm water
- 250ml beer
- 350gm rye flour
- 200gm white bread flower
- 10ml salt
- 50ml molasses
- 1 packet dried yeast
Topping
- 150ml beer
- 100gm rye flour
- pinch of sugar
- Handful of oats
Method
- Pour warm water and beer into your mixing bowl.
- Add the salt and the molasses.
- Mix the flours and start adding to the water.
- Half way through cover mixture well with flour.
- Now sprinkle yeast over. Sprinkle flour over the yeast and mix.
- Knead on a lightly floured work top until smooth.
- Oil and put back into bowl to rise.
- When doubled in size, mix the first 3 ingredients of The Beer Batter Topping.
- Tip the dough onto a floured surface and shape into a ball. Spread the ale paste over the loaf and sprinkle over the oats.
- Place onto a baking tray lined with parchment. Leave to prove.
- Preheat the oven to 220C and bake for 25 minutes. Reduce the oven temperature to 200C and bake for a further 10 minutes. The loaf will be golden-brown.
- Leave to cool on a wire rack.
