Butter Chicken

Easy recipe and so delicious!

Ingredients:

  • 1 tbsp oil
  • 1 tbsp butter
  • 1 medium onion, diced
  • 1 tsp ginger, minced/grated (or dry ginger)
  • 2 to 3 cloves garlic, crushed
  • 2 to 3 boneless and skinless chicken breasts, cut into chunks
  • 4 tbsp tomato paste
  • 4tsp butter chicken spice
  • Salt & pepper
  • 1 cup double cream plain yoghurt
  • Rice or flat bread to serve
  • Coriander to garnish (optional)

 

Method:

  • In a large pan add the oil, butter and onions
  • Cook on medium heat for about 3 or 4 minutes
  • Add ginger and garlic and cook for another 30 seconds, stirring.
  • Add chicken, tomato paste and spices and cook for 5 to 6 minutes (ensure chicken is cooked through).
  • Add the yoghurt and cook for 8 to 10 minutes on low heat, stirring occasionally.
  • Serve over rice (or with flat bread) and garnish with coriander.
