Easy recipe and so delicious!
Ingredients:
- 1 tbsp oil
- 1 tbsp butter
- 1 medium onion, diced
- 1 tsp ginger, minced/grated (or dry ginger)
- 2 to 3 cloves garlic, crushed
- 2 to 3 boneless and skinless chicken breasts, cut into chunks
- 4 tbsp tomato paste
- 4tsp butter chicken spice
- Salt & pepper
- 1 cup double cream plain yoghurt
- Rice or flat bread to serve
- Coriander to garnish (optional)
Method:
- In a large pan add the oil, butter and onions
- Cook on medium heat for about 3 or 4 minutes
- Add ginger and garlic and cook for another 30 seconds, stirring.
- Add chicken, tomato paste and spices and cook for 5 to 6 minutes (ensure chicken is cooked through).
- Add the yoghurt and cook for 8 to 10 minutes on low heat, stirring occasionally.
- Serve over rice (or with flat bread) and garnish with coriander.
