Sundried Tomato Hummus

Hummus is really easy to make… and this sundried tomato hummus is a winner!

Ingredients:
• 1/2 a tin chickpeas, drained and rinsed
. 4 to 5 sundried tomatoes (I used the ones in brine)
• 2 to 4 tbsp. water
• 2 tbsp. extra virgin olive oil
• 1 tbsp. lemon juice
• 1 garlic clove, minced
• ¾ tsp. ground cumin
• ¼ to ½ tsp. salt

Method:
Blend all the ingredients in a food processor or with a blend stick. Process until smooth and creamy.
If needed, add additional water to thin out the hummus.
Store covered in the refrigerator.
Enjoy with vegetable crudités, plain chips, add to wraps…
