Ginger balls

 

1 cup medjool dates, pitted

1 cup raw cashews

1 tablespoon ground ginger

1/2 teaspoon concentrated natural vanilla extract

pinch of salt

1/4 cup of desiccated coconut to roll the balls in

 

Place the ingredients into a blender or food processor and blend until it is coming together.

Roll into balls, then roll in the coconut.

Place in the fridge to set.

Enjoy.
