Ingredients:
- 45ml (3tbs) olive oil
- 15ml (1tbs) lemon juice
- 1 clove garlic, crushed
- salt and pepper to taste
- 2 spring onions, chopped
- 50g tomato, chopped
- 150g canned chickpeas, drained
- Feta
Method:
- Whisk the olive oil, lemon juice, garlic, and seasoning together in a salad bowl.
- Add the chopped onion, tomatoes, feta and chickpeas.
- Mix well
*substitute chickpeas with lentils if desired
